Sheet Pan Parmesan Chicken and Veggies

Ingredients:

  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp seasoned salt (or to taste)
  • ¼ tsp ground black pepper (or to taste)
  • ½ lb fresh green beans, trimmed
  • 1 small red potato, diced
  • 1 sweet bell pepper, chopped
  • 1 cup broccoli florets, chopped
  • 1 tbsp minced garlic
  • 3 tbsp olive oil
  • ⅓ cup all-purpose flour
  • 4 tbsp butter, melted
  • 1 cup panko bread crumbs
  • 1 cup freshly grated Parmesan cheese (divided)
  • 1 ½ lbs boneless, skinless chicken breasts (pounded flat)

Optional Dipping Sauce:

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • ½ tsp garlic powder
  • ¼ tsp Worcestershire sauce

Directions:

1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.

2. Mix oregano, parsley, paprika, garlic powder, seasoned salt, and pepper in a small bowl.

3. Toss green beans, potatoes, bell peppers, broccoli, and garlic with olive oil and half of the seasoning on the sheet pan.

4. Set up three bowls: one with flour, one with melted butter, and another with panko, ⅔ cup Parmesan, and the remaining seasoning.

5. Slice chicken into strips, coat in flour, dip in butter, and press into the Parmesan-panko mixture.

6. Push veggies to one side of the pan and arrange chicken on the other side. Sprinkle any leftover Parmesan-panko mix on top.

7. Bake for 10 minutes, then flip chicken and stir veggies. Bake for another 10-15 minutes, until chicken is cooked through (165°F) and veggies are tender.

8. For the dipping sauce, whisk mayonnaise, ketchup, garlic powder, and Worcestershire sauce.

9. Toss veggies with remaining Parmesan and serve with the dipping sauce.
