Ingredients
- 1 tbsp butter (melted)
- 1/3 cup blanched almond flour
- 1 large egg
- ½ tsp baking powder
- Pinch fine salt
Directions
- Microwave butter in a microwave-safe mug ~15 seconds to melt; swirl to coat mug interior.
- Add almond flour, egg, baking powder and salt. Whisk until smooth and free of lumps.
- Microwave on high about 90 seconds until set and springy. Let cool 2 minutes, then slice and serve.
Cook’s Note
- For extra flavor stir in 1 tsp Italian herbs, a pinch of garlic powder, or 1 tbsp shredded cheese before microwaving. If texture seems dense, try 10–15 seconds longer.
