Ingredients:

  • 12 large eggs
  • ⅔ cup milk
  • ½ tsp salt
  • 2 tbsp butter
  • 1 lb bulk pork sausage
  • 2 tbsp minced garlic
  • ½ red onion, diced
  • 1 tomato, diced
  • ¼ cup fresh cilantro, chopped
  • 1 (3.5 oz) can diced jalapeños (optional)
  • 1 (1 oz) package taco seasoning
  • 1½ cups shredded Cheddar cheese
  • 20 (6-inch) flour tortillas

Directions:

Step 1:
Gather all ingredients.

Step 2:
In a large bowl, whisk together eggs, milk, and salt. Heat butter in a skillet over medium-high heat, then pour in the egg mixture. Cook, stirring constantly, until the eggs are fully set, about 5 minutes.

Step 3:
Break the cooked eggs into small pieces and transfer them to a large bowl. Set aside.

Step 4:
Using the same skillet, cook the sausage and garlic over medium heat for about 5 minutes. Add the diced onion and continue cooking until the sausage is browned and crumbly. Drain any excess grease.

Step 5:
Add the sausage mixture to the eggs. Stir in diced tomato, cilantro, jalapeños, and taco seasoning until well combined. Let the mixture cool to room temperature, then fold in the shredded Cheddar cheese.

Step 6:
Place a tortilla on your work surface. Spoon some of the filling halfway between the bottom edge and the center. Flatten the filling into a rectangular shape with the back of a spoon. Fold the bottom of the tortilla over the filling, then fold in the sides, and roll it up tightly. Repeat with the remaining tortillas and filling.

Step 7:
Wrap each burrito tightly in plastic wrap and store in the freezer until ready to serve.

Step 8:
To serve, unwrap a burrito and heat it in the microwave for 3 to 4 minutes until hot.
