Air Fryer Frittata Recipe — 12-Minute Make-Ahead Breakfast

Air Fryer Frittata is the fast, make-ahead breakfast you didn’t know you needed — eggs set around sausage crumbles, peppers and cheese, cooked in the air fryer for a perfectly tender, sliceable frittata.

Ingredients

  • Cooking spray
  • 2 tsp butter (optional, for flavor)
  • ⅓ cup diced bell pepper
  • ⅓ cup chopped onion
  • ½ cup cooked breakfast sausage crumbles (use turkey sausage as a lean alternative if desired)
  • ½ cup shredded Colby Jack cheese
  • 6 large eggs
  • Salt and ground black pepper, to taste
  • ½ tsp hot pepper sauce (optional)
  • ¼ cup salsa (for serving)

Directions

  1. Preheat a 5.8-qt (or larger) air fryer to 350°F (175°C). Spray a 6-inch round metal inner pan (that fits your air fryer) with cooking spray.
  2. (Optional) Add butter to the pan and insert into the air fryer to melt about 45 seconds. Add bell pepper and onion; air-fry 2 minutes to soften. Carefully remove the inner pan and stir in sausage crumbles; sprinkle Colby Jack over the mixture.
  3. Whisk eggs in a bowl with salt, pepper and hot sauce (if using). Pour egg mixture over the sausage-veggie base and lightly mix.
  4. Return the inner pan to the air fryer basket and cook about 12 minutes, or until a toothpick inserted in the center comes out clean. Continue in 30-second intervals if needed until set and lightly browned.
  5. Remove, let cool slightly, slice into wedges and serve warm with salsa.

Cook’s Note

  • You can prepare the mixed base ahead and refrigerate overnight; add eggs and air-fry in the morning. For a crustless quiche alternative, add a handful of spinach or swap cheese for feta.
