Ingredients

  • 1 (8 ounce) sweet potato (about 1 medium)
  • 1 tablespoon canola oil (or avocado oil)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Directions

Step 1
Slice the sweet potato into uniform 1/16″ (≈3/32″ preferred) rounds using a mandoline. Place slices in a large bowl of cold water and soak 20 minutes to remove excess starch.

Drain and pat the slices completely dry on paper towels or a clean dish towel. Return dry slices to a clean bowl.

Toss the slices with canola oil, sea salt, and black pepper until evenly coated. Wipe any excess oil from the bowl.

Preheat the air fryer to 350°F (175°C). Lightly spray the basket with cooking spray. Arrange slices in a single layer (work in batches to avoid overcrowding).

Air fry 12–16 minutes, turning and rearranging every 4 minutes so chips crisp evenly. Watch closely in the final 2–3 minutes; remove golden chips with tongs as they finish so the rest don’t burn.

Step 6
Cool chips on a wire rack 5 minutes — they will crisp further. Store in an airtight container for up to 3 days.


Cook’s Note

If you don’t have a mandoline, use a very sharp knife and slice as thinly and uniformly as possible. For extra flavor, toss with smoked paprika, garlic powder, or a pinch of cayenne before air frying.
