All-Natural No-Bake Cookies are an easy, pantry-friendly treat that delivers gooey peanut-butter-chocolate flavor without processed sugar. Made with honey, coconut oil, oats and natural peanut butter, these no-bake cookies set quickly for a wholesome snack or dessert.

Ingredients

  • 1 cup honey (or maple syrup for variation)
  • ½ cup coconut oil
  • ½ cup unsweetened cocoa powder
  • 2 cups rolled oats
  • 1 cup natural peanut butter (stirred)
  • 1 cup unsweetened flaked coconut
  • 1 tsp vanilla extract

Directions

  1. Line a baking sheet with waxed paper.
  2. In a small saucepan over medium heat combine honey, coconut oil, and cocoa powder. Bring to a gentle boil and cook 2 minutes, whisking constantly so cocoa dissolves and mixture becomes glossy.
  3. Remove from heat and immediately stir in peanut butter, rolled oats, flaked coconut and vanilla until evenly combined and smooth.
  4. Drop tablespoons of the mixture onto prepared waxed paper. Flatten slightly if you prefer a compact cookie.
  5. Let cookies cool at room temperature until firm, about 20 minutes (or chill 10 minutes in the fridge to speed setting). Store in an airtight container.

Cook’s Note

  • For crunch add ¼ cup chopped toasted almonds or swap oats for gluten-free certified oats. If cookies are too soft, refrigerate until set.
