Ingredients
- 1 cup honey (or maple syrup for variation)
- ½ cup coconut oil
- ½ cup unsweetened cocoa powder
- 2 cups rolled oats
- 1 cup natural peanut butter (stirred)
- 1 cup unsweetened flaked coconut
- 1 tsp vanilla extract
Directions
- Line a baking sheet with waxed paper.
- In a small saucepan over medium heat combine honey, coconut oil, and cocoa powder. Bring to a gentle boil and cook 2 minutes, whisking constantly so cocoa dissolves and mixture becomes glossy.
- Remove from heat and immediately stir in peanut butter, rolled oats, flaked coconut and vanilla until evenly combined and smooth.
- Drop tablespoons of the mixture onto prepared waxed paper. Flatten slightly if you prefer a compact cookie.
- Let cookies cool at room temperature until firm, about 20 minutes (or chill 10 minutes in the fridge to speed setting). Store in an airtight container.
Cook’s Note
- For crunch add ¼ cup chopped toasted almonds or swap oats for gluten-free certified oats. If cookies are too soft, refrigerate until set.
