Ingredients

  • 1½ cups almond flour (fine/blanched)
  • ⅓ cup flaxseed meal
  • 4 large eggs
  • ¼ cup unsweetened almond milk
  • 2 tbsp olive oil
  • 2 tsp baking powder
  • ½ tsp salt

Directions

Step 1 — Prep: Preheat oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line with parchment.
Step 2 — Dry Mix: In a bowl, whisk almond flour, flaxseed meal, baking powder, and salt.
Step 3 — Wet Mix: In another bowl, whisk eggs, almond milk, and olive oil until combined.
Step 4 — Combine: Fold wet into dry until a smooth, slightly thick batter forms.
Step 5 — Bake & Cool: Pour into prepared pan, bake ~40 minutes until golden and a toothpick comes out clean. Cool 10 minutes in pan, then cool fully on a rack before slicing.
