Ingredients
- 2 cups quick oats
- 2 cups almond flour
- ½ cup peanut butter (natural)
- ½ cup milk (dairy or plant)
- 1/3 cup honey (or agave)
- 1 tsp vanilla extract
Directions
- In a small saucepan over medium-low heat combine peanut butter, milk, honey and vanilla. Warm, stirring until smooth and combined (about 3–5 minutes). Remove from heat.
- In a large bowl combine oats and almond flour. Pour the warm wet mixture over dry ingredients and stir until well combined — it should hold together when pressed.
- Press the mixture firmly into a 9-inch square pan lined with parchment. Refrigerate at least 1 hour to set. Lift out with parchment and cut into 9 bars.
Cook’s Note
Add ¼ cup cocoa powder for chocolate bars, or fold in ½ cup chopped dark chocolate or dried fruit. Store in the fridge up to 5 days or freeze up to 1 month.
