Almond Flour Energy Bars — No-Bake Peanut Butter Oat Bars

Almond Flour Energy Bars are chewy, nutty snack bars loaded with oats, almond flour and peanut butter — perfect for lunchboxes, hiking, or healthy cravings. They’re no-fuss to make and store for days in the fridge or months in the freezer.

Ingredients

  • 2 cups quick oats
  • 2 cups almond flour
  • ½ cup peanut butter (natural)
  • ½ cup milk (dairy or plant)
  • 1/3 cup honey (or agave)
  • 1 tsp vanilla extract

Directions

  1. In a small saucepan over medium-low heat combine peanut butter, milk, honey and vanilla. Warm, stirring until smooth and combined (about 3–5 minutes). Remove from heat.
  2. In a large bowl combine oats and almond flour. Pour the warm wet mixture over dry ingredients and stir until well combined — it should hold together when pressed.
  3. Press the mixture firmly into a 9-inch square pan lined with parchment. Refrigerate at least 1 hour to set. Lift out with parchment and cut into 9 bars.

Cook’s Note

Add ¼ cup cocoa powder for chocolate bars, or fold in ½ cup chopped dark chocolate or dried fruit. Store in the fridge up to 5 days or freeze up to 1 month.
