Ingredients
- 2 (10-inch) flour tortillas
- 2 tbsp vegetable oil
- 1 small onion, chopped
- ½ red bell pepper, chopped
- 1 tsp minced garlic
- 1 tsp minced jalapeño (adjust to heat preference)
- 1 (15 oz) can black beans, rinsed & drained
- 3 oz cream cheese, cubed (or vegan cream cheese)
- ½ tsp salt (adjust to taste)
- 2 tbsp chopped fresh cilantro
- Optional: avocado slices, hot sauce, shredded cheese
Directions
- Preheat oven to 350°F (175°C) and wrap tortillas in foil; warm in oven ~15 min.
- Heat oil in a skillet over medium. Sauté onion, bell pepper, garlic and jalapeño ~2 minutes until softened.
- Add black beans and cook until heated through (~3 minutes). Stir in cream cheese and salt; cook, stirring, until cream cheese melts and filling becomes creamy (~2 minutes). Stir in cilantro and remove from heat.
- Spoon filling across each warmed tortilla, fold ends and roll tightly to create burritos. Serve immediately with salsa, guacamole or a side salad.
