Delicious Black Bean Burritos — Cheesy Black Bean Burritos

Black bean burritos — an ultra-satisfying vegetarian burrito with sautéed peppers and onions, creamy black beans and melty cream cheese wrapped in warm flour tortillas. Add avocado or hot sauce for extra flair.

Ingredients

  • 2 (10-inch) flour tortillas
  • 2 tbsp vegetable oil
  • 1 small onion, chopped
  • ½ red bell pepper, chopped
  • 1 tsp minced garlic
  • 1 tsp minced jalapeño (adjust to heat preference)
  • 1 (15 oz) can black beans, rinsed & drained
  • 3 oz cream cheese, cubed (or vegan cream cheese)
  • ½ tsp salt (adjust to taste)
  • 2 tbsp chopped fresh cilantro
  • Optional: avocado slices, hot sauce, shredded cheese

Directions

  1. Preheat oven to 350°F (175°C) and wrap tortillas in foil; warm in oven ~15 min.
  2. Heat oil in a skillet over medium. Sauté onion, bell pepper, garlic and jalapeño ~2 minutes until softened.
  3. Add black beans and cook until heated through (~3 minutes). Stir in cream cheese and salt; cook, stirring, until cream cheese melts and filling becomes creamy (~2 minutes). Stir in cilantro and remove from heat.
  4. Spoon filling across each warmed tortilla, fold ends and roll tightly to create burritos. Serve immediately with salsa, guacamole or a side salad.
