Ingredients:

  • 1 cup Italian-seasoned bread crumbs (or more to taste)
  • Salt and black pepper, to taste
  • 1 egg, lightly beaten
  • ½ cup bay scallops (or more to taste)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 ½ teaspoons lemon juice

Directions:

Step 1:
Mix bread crumbs, salt, and pepper in a resealable plastic bag.

Step 2:
Dip scallops in the beaten egg, then place them in the bread crumb mixture. Seal the bag and shake to evenly coat the scallops.

Step 3:
Heat butter, olive oil, and lemon juice in a skillet over medium-high heat. Add breaded scallops and cook for 6-7 minutes, shaking the pan occasionally until the scallops are golden brown.


Cook’s Note:

  • Use plain bread crumbs if preferred.
  • Bay scallops are great, but sea scallops work too!
