Chewy No-Bake Granola Bars Recipe — Easy No-Bake Breakfast Bars

Chewy No-Bake Granola Bars are an easy, crowd-pleasing snack made without baking. Rolled oats, steel-cut oats, rice cereal, dried fruit and almonds get a sweet brown sugar-honey binder and a chocolate-chip topping for irresistible chewy bars.

Ingredients

  • 1 cup rolled oats
  • 1 cup steel-cut oats
  • 1 cup crispy rice cereal
  • ½ cup chopped mixed dried fruit (apricots/raisins)
  • ½ cup chopped almonds
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup honey
  • 2 tsp vanilla extract
  • ½ cup mini chocolate chips

Directions

  1. Grease a 9×13-inch baking dish or line with parchment.
  2. In a large bowl stir together rolled oats, steel-cut oats, rice cereal, dried fruit and chopped almonds.
  3. In a small saucepan over medium heat melt butter, then whisk in brown sugar, honey and vanilla until sugar dissolves and mixture is slightly thickened (~2 minutes).
  4. Pour the warm syrup over the oat mixture and stir until evenly coated. Press the mixture firmly into the prepared pan. Immediately press mini chocolate chips into the top so they adhere.
  5. Refrigerate until fully chilled and set, about 1 hour. Lift from pan and cut into 24 bars. Store chilled.

Cook’s Note

  • For nut-free bars replace almonds with sunflower seeds. Press mixture firmly to ensure bars don’t crumble.
