Ingredients
- 1 lb lean ground beef
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 (10 oz) can sliced mushrooms, drained
- 1 tsp dried oregano
- 2 dashes hot pepper sauce (optional)
- Salt & black pepper to taste
- 2 (10 oz) packages frozen chopped spinach, thawed & drained
- 1 (10.5 oz) can condensed cream of celery soup
- 1 cup sour cream (or Greek yogurt for tangier/healthier twist)
- 1 (8 oz) package shredded mozzarella cheese
Directions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium-high, brown ground beef with onion and garlic until crumbled and cooked through, 5–7 minutes. Drain excess fat.
- Stir in mushrooms, oregano, hot sauce, salt and pepper; simmer 3–5 minutes to marry flavors.
- Add drained spinach, condensed soup and sour cream; cook until heated through and homogenous, 3–5 minutes. Transfer to a casserole dish and top evenly with shredded mozzarella.
- Bake 15–20 minutes until cheese melts and edges bubble. Let rest 5 minutes before serving.
