Ground beef spinach casserole — a creamy, family-friendly casserole blending browned beef, sautéed aromatics, mushrooms and tender spinach in a sour-cream enriched sauce, topped with melted mozzarella for a golden, bubbly finish.

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 (10 oz) can sliced mushrooms, drained
  • 1 tsp dried oregano
  • 2 dashes hot pepper sauce (optional)
  • Salt & black pepper to taste
  • 2 (10 oz) packages frozen chopped spinach, thawed & drained
  • 1 (10.5 oz) can condensed cream of celery soup
  • 1 cup sour cream (or Greek yogurt for tangier/healthier twist)
  • 1 (8 oz) package shredded mozzarella cheese

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium-high, brown ground beef with onion and garlic until crumbled and cooked through, 5–7 minutes. Drain excess fat.
  3. Stir in mushrooms, oregano, hot sauce, salt and pepper; simmer 3–5 minutes to marry flavors.
  4. Add drained spinach, condensed soup and sour cream; cook until heated through and homogenous, 3–5 minutes. Transfer to a casserole dish and top evenly with shredded mozzarella.
  5. Bake 15–20 minutes until cheese melts and edges bubble. Let rest 5 minutes before serving.
