Ingredients:
- 1 9-inch pie crust (unbaked)
- 3 large eggs
- 1 egg yolk
- ½ cup white sugar
- ½ cup brown sugar (packed)
- 1 tsp salt
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 1½ cups milk
- ½ cup heavy cream
- 2 cups pumpkin puree
Directions:
Step 1:
Preheat the oven to 425°F (220°C).
Step 2:
In a large bowl, whisk together eggs, egg yolk, white and brown sugars. Add in the salt, cinnamon, nutmeg, ginger, and cloves. Slowly mix in milk, heavy cream, and pumpkin puree until smooth.

Bake in the preheated oven for 10 minutes. Reduce the oven temperature to 350°F (175°C), and continue baking for 40-45 minutes, or until the filling is set.
