Overnight Buckwheat Oats are an excellent gluten-free alternative to traditional overnight oats. Rolled buckwheat flakes, chia, flax and coconut soak overnight for a creamy, grab-and-go breakfast topped with berries and a drizzle of agave.

Ingredients
- ¼ cup buckwheat flakes
- 2 teaspoons chia seeds
- 1 tablespoon shredded coconut (divided)
- 1 teaspoon flax seed meal
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon vanilla powder (or ¼ tsp vanilla extract)
- ⅓ cup milk (or nut milk)
- 2 tablespoons mixed berries
- 1 teaspoon agave nectar
Directions
- In a jar combine buckwheat flakes, chia seeds, 1½ tsp coconut, flax meal, cinnamon and vanilla powder. Stir to combine.
- Pour in milk, stir, cover and refrigerate 8 hours or overnight.
- In the morning stir the mixture, warm 30 seconds if desired, then top with mixed berries, remaining coconut and agave. Serve.
Cook’s Note
Use nut milk for dairy-free bowls. Swap agave for honey or maple syrup and use dried fruit if fresh berries aren’t available.
