Overnight Buckwheat Oats — Gluten-Free Overnight Breakfast with Berries

Overnight Buckwheat Oats are an excellent gluten-free alternative to traditional overnight oats. Rolled buckwheat flakes, chia, flax and coconut soak overnight for a creamy, grab-and-go breakfast topped with berries and a drizzle of agave.

Ingredients

  • ¼ cup buckwheat flakes
  • 2 teaspoons chia seeds
  • 1 tablespoon shredded coconut (divided)
  • 1 teaspoon flax seed meal
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon vanilla powder (or ¼ tsp vanilla extract)
  • ⅓ cup milk (or nut milk)
  • 2 tablespoons mixed berries
  • 1 teaspoon agave nectar

Directions

  1. In a jar combine buckwheat flakes, chia seeds, 1½ tsp coconut, flax meal, cinnamon and vanilla powder. Stir to combine.
  2. Pour in milk, stir, cover and refrigerate 8 hours or overnight.
  3. In the morning stir the mixture, warm 30 seconds if desired, then top with mixed berries, remaining coconut and agave. Serve.

Cook’s Note

Use nut milk for dairy-free bowls. Swap agave for honey or maple syrup and use dried fruit if fresh berries aren’t available.
