Overnight bundt cinnamon buns (Land of Nod style) are a simple make-ahead brunch showstopper: frozen dinner rolls are layered with brown sugar, cinnamon, and raisins, drenched in melted butter, and left overnight to proof in a Bundt pan. In the morning they bake up into a gooey, pull-apart Bundt cake of sweet buns — fuss-free and perfect for holiday mornings.

Ingredients

  • 20 unbaked frozen dinner rolls (thawed to room temp OR used frozen as recipe indicates)
  • 1 cup packed brown sugar
  • 1/4 cup instant vanilla pudding mix
  • 2 teaspoons ground cinnamon
  • 3/4 cup raisins (optional, but traditional)
  • 1/3 cup unsalted butter, melted

Directions

Step 1
Lightly grease a 10-inch Bundt pan with butter or nonstick spray. If your rolls are frozen, arrange them in the pan according to the recipe direction; if thawed, proceed similarly.

Layer the rolls into the prepared Bundt pan in an even ring. Sprinkle the brown sugar, instant pudding mix, and ground cinnamon evenly over the rolls. Scatter raisins over the sugar mixture.

Pour the melted butter evenly over the top of the stacked rolls so the butter seeps through the layers.

Cover the pan with a clean damp dish towel and let sit at room temperature for 8 hours or overnight to proof and meld the flavors.

When ready to bake, preheat the oven to 350°F (175°C).
