Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 2 cups apple juice
- 1 cup raisins
- 2 tbsp lemon juice
- 1 tsp ground cinnamon (or to taste)
- Pinch salt
- 2 tsp vanilla extract
Directions
- Rinse quinoa thoroughly in a fine sieve; drain. In a medium saucepan combine quinoa and 2 cups water; bring to a boil over high heat. Reduce heat to low, cover and simmer until water is absorbed and quinoa is tender, about 15 minutes.
- Stir in apple juice, raisins, lemon juice, cinnamon and a pinch of salt. Cover and simmer an additional 15 minutes, stirring occasionally so raisins plump and flavors meld.
- Remove from heat and stir in vanilla extract. Serve warm topped with fresh berries, sliced banana and a drizzle of maple syrup if desired.
Cook’s Note
This pudding stores well — refrigerate and reheat with a splash of milk or plant milk. Swap raisins for chopped dates or dried apricots, and use orange juice for a brighter fruit note.
