Quinoa Breakfast Pudding — Vegan Quinoa Porridge with Raisins & Apple Juice

Quinoa Breakfast Pudding transforms quinoa into a warmly spiced, vegan morning porridge. Simmered in apple juice with raisins and lemon, it’s naturally sweet and comforting — a great make-ahead breakfast or nourishing dessert topped with berries or banana.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 cups apple juice
  • 1 cup raisins
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon (or to taste)
  • Pinch salt
  • 2 tsp vanilla extract

Directions

  1. Rinse quinoa thoroughly in a fine sieve; drain. In a medium saucepan combine quinoa and 2 cups water; bring to a boil over high heat. Reduce heat to low, cover and simmer until water is absorbed and quinoa is tender, about 15 minutes.
  2. Stir in apple juice, raisins, lemon juice, cinnamon and a pinch of salt. Cover and simmer an additional 15 minutes, stirring occasionally so raisins plump and flavors meld.
  3. Remove from heat and stir in vanilla extract. Serve warm topped with fresh berries, sliced banana and a drizzle of maple syrup if desired.

Cook’s Note

This pudding stores well — refrigerate and reheat with a splash of milk or plant milk. Swap raisins for chopped dates or dried apricots, and use orange juice for a brighter fruit note.
