Slow Cooker Breakfast Burritos are a brilliant hands-off solution for crowd feeding. This slow-cooker breakfast casserole blends turkey sausage, hash browns, eggs and cheese for a warm, customizable filling. Serve inside warmed tortillas with avocado, salsa and a sparkling orange mocktail for brunch.

Ingredients
- 2 lb turkey breakfast sausage (crumbled)
- 1 medium onion, finely chopped
- 1 medium bell pepper, finely chopped
- Cooking spray
- 1 (16 oz) package frozen shredded hash browns, thawed
- 2½ cups shredded Cheddar cheese (or Monterey Jack)
- 12 large eggs
- 1 cup milk
- 1 tsp kosher salt
- ½ tsp ground black pepper
- 12 (10-inch) flour tortillas, warmed
- Toppings (optional): shredded cheese, diced avocado, salsa, cilantro, chopped onion, hot sauce
- Beverage suggestion (non-alcoholic): chilled sparkling orange juice or sparkling water with citrus
Directions
- In a large skillet over medium-high heat, cook turkey sausage until lightly browned and crumbly, about 8 minutes. Add onion and bell pepper; cook until softened (~5 minutes). Drain excess fat and set aside. (You can do this step a day ahead.)
- Spray slow cooker with cooking spray. Add cooked sausage mixture, thawed hash browns and 1½ cups shredded cheese, mixing evenly.
- In a bowl whisk eggs, milk, salt and pepper. Pour egg mixture into slow cooker and stir to combine. Cover and cook Low 6–8 hours or High 3–4 hours, stirring after the first hour to distribute.
- When set, use warm tortillas to assemble burritos: spoon filling down center, add toppings as desired, fold and roll. Serve with avocado, salsa and a sparkling orange mocktail.
Cook’s Note
No slow cooker? Transfer mixture to a greased 9×13 baking dish and bake at 350°F (175°C) for 60–70 minutes until set. To stretch servings, use 6-inch tortillas and make smaller burritos.
