Ingredients
- 2 lb bulk turkey breakfast sausage (use turkey instead of pork)
- 1 medium onion, finely chopped
- 1 medium bell pepper, finely chopped
- Cooking spray
- 1 (16 oz) package frozen shredded hash browns, thawed
- 2 1/2 cups shredded cheddar cheese
- 12 large eggs
- 1 cup milk
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 12 (10-inch) flour tortillas, warmed, for serving
Directions
- Cook sausage & vegetables. In a large skillet over medium-high heat, cook turkey sausage until lightly browned and crumbly (about 8 minutes). Add onion and bell pepper; cook until soft, about 5 minutes. Drain excess oil. (This step can be done a day ahead.)
- Layer in slow cooker. Spray slow cooker with cooking spray. Add sausage-vegetable mixture, thawed hash browns and 2 cups of shredded cheddar to the slow cooker and spread evenly.
- Whisk eggs & pour. In a bowl whisk eggs, milk, salt and pepper until smooth. Pour egg mixture over the layered ingredients in the slow cooker and stir gently to combine.
- Slow cook. Cook on Low 6–8 hours (or on High 3–4 hours), stirring after the first hour to ensure even cooking. If cooking on High, check often to avoid overcooking.
- Serve in tortillas. Once set and no longer jiggly, scoop hot filling into warmed tortillas. Top with remaining cheddar and desired toppings (avocado, salsa, cilantro).
Cook’s Note
- Speed option: bake in a 9×13 casserole at 350°F for 60–70 minutes until set. Substitute Monterey Jack cheese for a milder flavor. Keeps warm in slow cooker for serving.
